Liver Cake

A wheat-free treat or meal topping that is totally nutritious.

Yield: 10-12 servings

Total Time: 1hour

Ingredients:

½ lb. fresh raw organic chicken liver

2 free-range eggs (beaten)

4 tbsp. vegetable oil

3 tbsp. unsweetened canned pumpkin

1 cups instant oats

2 tbsp. nutritional yeast (optional)

Filtered water (for the batter)

Directions:

1. Preheat the main oven to 350 degrees F.

2. In a food blender, process the chicken liver, until a puree is formed; this will take 2-3 minutes.

3. Add the beaten eggs to a bowl and add the vegetable oil. Next, add the pureed liver to the bowl.

4. Add the dry ingredients a little at a time, while stirring, until combined. Gradually add the water until a batter-like consistency is achieved.

5. Pour the batter into a cake tin and bake in the preheated oven for 45-50 minutes, or until the cake is firm.

6. Allow the cake to cook in the tin, and when it is cool enough to handle, gently place it on a baking rack and transfer it to the refrigerator until cool.

7. Using a sharp knife slice and dice the cake into bite-size pieces.
